Banana Yogurt Muffins with Reese's Buttercups


Done with pharm!! I don't know how pharm students memorize lists and lists of drugs and their interactions. I think I went cross-eyed from reading my list for the exam last night. Gad.

These banana muffins are something I made for my friends in class. Although, I had only four left to share, after my roommate had 2 fresh from the oven, I had one, my neighbor took 2 and my bf took 3....
yea... they disappeared too quickly...

An easy muffin recipe that uses some yogurt in place of oil, get's rid of your spotty bananas and most importantly has CHOCOLATE <3

Banana Yogurt Muffins with Reese's Buttercups

Makes 12 muffins
Ingredients
2 ripe bananas
2 eggs
1 tsp vanilla
1/3 cup brown sugar
1/3 cup oil
3/4 cup yogurt

2 cup flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup crushed Reese's peanut butter cups

  1. Preheat oven to 350F
  2. Mash bananas in a bowl, beat in the eggs and mix in vanilla, brown sugar, oil and yogurt
  3. In a large bowl, mix the dry ingredients (flour, baking powder, baking soda, salt, cinnamon)
  4. Mix the wet into the dry mix until JUST incorporated (don't over mix, or you'll get a brick)
  5. Fold in crushes Reese's
  6. Bake 18-20 mins

  1. Made these today and they are very yummy. I used half white and half whole wheat flour and used Greek yogurt. Will definitely be making these often.
