Banana Bread Muffins with Chocolate Chips & Walnuts

Taking a break from studying. Procrasti-baking! I made these last week and was supposed to post this recipe. What better time to blog if not 2 days before a heme-onc exam that has me reduced to a nail biting chipmunk?

Banana Bread Muffins with Chocolate Chips & Walnuts

makes 14 muffins

1.5 cups flour
1/2 cup quick oats
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1.5 tsp cinnamon

5 tbsps butter, melted
1/4 cup white sugar
1/2 cup brown sugar
3-4 bananas, ripe and mashed
2 eggs, beaten
1 tsp vanilla

1/2 cup walnut, coarsely chopped
1/2 cup semisweet chocolate chips
  • Preheat oven to 350 F. Lightly grease a muffin pan or line with paper
  • In large bowl, mix together the melted butter, sugars, bananas, egg,  and vanilla
  • In a medium bowl, mix the flour, oats, baking soda and powder, salt and cinnamon. Add to wet mix and stir until moistened (don't overmix!). Fold in walnuts and chocolate chips
  • Spoon batter almost fully into prepared muffin pan. Bake for 15-20 mins, until toothpick inserted into center of muffin comes out clean
  • Let cool for at least 5 mins


  1. I always used to bake before exams...such a stress relief! These look super tasty.

  2. Looks good! Do you think this would work as a loaf?

  3. yeah I'm sure it would. I always make loaves and muffins with the same mix. Probably lower the temp to 320F and bake for 45-1hr. Cover with foil if it gets too brown on top!
