Mini Baked Yeasted Donuts


I only have 5 more exams until I can go home! I just finished the endocrine exam today, which was 10,000 times more interesting than the stomach. My friends and I were like, "dude, I think I have hypothyroidism or definitely have adrenal insufficiency." Since some of the symptoms were palpitations, lethargy, sleepy all the time and losing focus. Which I think most of us are feeling right now! Stressed, lack of sleep and burned out. Even though I just finished an exam, I have 1 on Friday but it takes me at least 3 days to recuperate from studying :P Although, I'm baking bread right now and kneading all my frustrations into it!

I made these donuts a while ago. I don't think they're the best baked yeasted donuts. I didn't find them very sweet so I would probably add more sugar to the dough. They do look pretty and fluffy, but they just can't beat deep fried dough!


Mini Baked Yeasted Donuts

makes ~2 dozen mini donuts and donut holes




Dough
¾ cup whole milk
¼ cup water
3 tablespoons unsalted butter
1 egg
2½ cups all-purpose flour
3 tbsp sugar
½ teaspoon salt

1/2 tsp cinnamon
1½ teaspoons active dry yeast

Chocolate glaze 
3/4 powdered sugar
3 tbsp cocoa powder
3 tbsp half and half
1/2 tsp vanilla

Cinnamon Sugar
1/2 cup sugar
1 tbsp cinnamon
  1. Make the dough: In a microwaveable bowl, heat milk, water and butter until warm and the butter has melted. Whisk in egg
  2. In your bowl for the electric mixer mix flour, sugar, salt, yeast, cinnamon. Using the dough hook (I didn't paddle it first), mix the wet ingredients to the dry at low speed for ~ 3 mins. Continue to mix on medium speed until the dough is smooth and comes off the side ~5mins
  3. Transfer dough into a greased large bowl and cover with greased plastic wrap too. Let it rise for ~45mins-1 hr
  4. Preheat oven to 350 and line a baking sheet with parchment paper. On a floured surface, roll dough to 1/2" thick. Cut out donuts and donut holes. I used a plastic bottle cap for the inner hole and a cup for the outer!
  5. Transfer donuts to baking sheet, brush with some melted butter and bake for 10-12 mins. Let cool for 10 mins
  6. If you want to make the cinnamon sugar holes and donuts. Dip holes in melted butter while the donuts are still a little warm and roll in cinnamon sugar mix
  7. For chocolate glaze: I found the donuts were better when the donuts were first dipped wholly with a normal glaze (without cocoa powder) like they do at Krispy Kreme because the dough is bland. And then make the chocolate glaze and dip the tops of the donuts. Sprinkles optional here. And let dry completely ~10 mins
